On Thursday, July 25 Alex Tung, the Canadian Chef Brand Ambassador for Acadian Sturgeon and Caviar, will be at Coquille to share his passion for this prehistoric fish. Their Acadian Wild Caviar comes from Bay of Fundy Atlantic sturgeon and is harvested during the migration up the Saint John River. The caviar is processed in a state-of-the-art Canadian Food Inspection Agency inspected processing plant in Carters Point, NB using the standardized malassol (low salt) technique. With egg size similar to sevruga, this caviar has an exquisite taste (buttery, nutty, umami) and will delight both caviar connoisseurs and first timers!
